Get to know the secrets of the elaboration of artisan cheese from Navarre and enter the world where people and nature have lived together in harmony since ancient times.
In our maturing room, we will explain you the process of elaboration of the cheeses with Idiazabal Denomination of Origin, highlighting its characteristics and production criteria. In addition, we will reveal the secret of the Sixth Sense of cheese and explain why our cheeses are so special.
We invite you to live a unique experience where you will discover the tradition of sheep breeding and our customs, in an environment surrounded by beautiful valleys, and overlooking the Malloas. During the visit to our cheese dairy, we will tour our farm, including the spaces where the sheep rest and the milking room. Depending on the season, you will be able to walk our lambs in the meadow and learn how to milk by hand.
At the end of the visit, become a judge for a day! Enjoy an organic tasting based on the criteria of professional juries, where you can appreciate the nuances of all the varieties of our cheeses, accompanied by our artisan bread.
